400g brown sugar

5tbsp honey

100g margarine

4 eggs

750g flour

1 tbsp gingerbread spices

1 tbsp cocoa

2 tsp bicarbonate of soda

icing sugar

egg whites

sweets

Slowly heat the sugar, honey and margarine until it becomes a smooth paste. Let cool down.

Meanwhile combine the dry ingredients. Add the eggs one by one, then add the sugar mixture. Knead to form a smooth sticky dough. Cover and let rest for about a day.

 

Roll out and cut into shapes. Bake at 200°C until the gingerbread is brown. Let cool completely.

Beat the egg whites stiff. On a slow mixing speed, add icing sugar until the mixture reaches a creamy consistency. Use this as glue to stick the house together. Any extra can be used for decoration and to stick on sweets.
